I discovered these whilst on weightwatchers and haven’t looked back since! Light, fluffy and tasty pancakes which I think taste better than the flour based ones.
Super quick and easy to make, I like to serve mine with the rest of the banana, figs and a drizzle of maple syrup. There are endless toppings and variations to try! For only 6 smartpoints they are a filling, nutritious and hunger busting brekkie. Fill your boots and enjoy, Mrs H x
serves 1, smartpoints 6
20 g oats
1 banana, half mashed, half sliced
Splash of skimmed milk
Fruit of your choice
2tsp maple syrup
Using a pestle & mortar grind the oats or you can blitz them in a food processor.
Put the oats in a bowl with the egg and the mashed banana and mix well to combine. Loosen the mixture up slightly with a splash of skimmed milk.
Heat a non stick frying pan on low-medium. Add a little spray, and then add spoonfuls of the mixture to the pan. Cook on a low heat for a few mins on both sides till fluffy.
Serve with the fruit of your choice, the sliced banana and drizzle over the maple syrup.
