cinnamon + banana oat pancakes with blueberry compote

A gorgeous Sunday morning breakfast, much needed after celebrating a lovely friends 40th birthday last night! 

Full of fuel for a day of entertaining the 7 year old, this is a quick and easy breakfast that all the family will enjoy! Mrs H x


Serves 1, smartpoints 6

20 g oats

1 egg

1/4 teaspoon cinnamon

1 banana, half mashed, half sliced

Splash of skimmed milk

Handful of blueberries 

1 tsp maple syrup

Dollop of fat free yogurt


method:

Using a pestle & mortar grind the oats or blitz them in a food processor.

Put the oats in a bowl with the egg, cinnamon and mashed banana and mix well to combine. Loosen the mixture up slightly with a splash of skimmed milk.

Heat a non stick frying pan on low-medium. Add a little spray, and then add spoonfuls of the mixture to the pan. Cook on a low heat for a few mins on both sides till fluffy.

Whilst the pancakes are cooking pop the blueberries and maple syrup in a microwaveable container and heat for a couple of minutes to achieve a compote consistency. 

Serve the pancakes with the compote, sliced banana and a dollop of fat free yogurt.
