piri piri chicken burgers + avocado

This may look dirty but it certainly isn’t! It’s just proper tasty and full of moist marinated chicken, avocado and salad. Not only tasty but filling too and so big you’ll wonder how you’ll eat it, but you will! Comes in at a very cheap 12 smart points too. Perfect for a cosy Friday night in. Enjoy, Mrs H x

serves 4, smart points 12

4 skinless medium chicken breasts

4 brioche buns

marinade:

1 tbsp olive oil

2 red chillis, finely chopped

2 fat garlic cloves, chopped

Half a red pepper, finely chopped

1 tsp oregano

1/2 tsp chilli flakes/crushed dried chilli

2tbsp red wine vinegar

Juice of Half lemon

Pinch of salt

to serve:

Lettuce, tomato, onion, jalapeños, reduce fat sour cream, salsa and avocado wedges


method:

Flatten the chicken a little with a rolling pin and place in a dish.

Make the marinade. In a pestle and mortar bash together the chilli, garlic, oregano and red pepper. Add the olive oil, lemon juice, red wine vinegar, salt and sugar. Mix together and pour over the chicken. Leave to marinate for at least 30 minutes.

Once ready to cook, heat a griddle pan to med/high. Add the chicken, spooning a little marinade on and cook for 5 mins on both sides until cooked through.

Once cooked, remove from pan and set aside to rest for a few mins.

Arrange the lettuce, tomatoes, onion rings and avocado slices on one side of the brioche. Add a good spoonful of reduced fat sour cream and salsa on the opposite half of the brioche.

Place the chicken on top of the lettuce, add a squeeze of lime or lemon and sprinkle with jalapeños. Top with the other half of the brioche. Devour.
