chipotle and lime steak fajitas with avo cream

Perfect for a help yourself weekend picky dinner which my boys love. The steak can be marinated way in advance and then they takes no time at all to cook and put together. Another perfect Saturday night supper. Enjoy, Mrs H x

Serves 4

4 thick rump steaks

2 red onions, peeled and cut into wedges

2 mixed peppers, cut into strips

Sprinkle of Sweet smoked paprika


Marinade:
2 heaped tsp chipotle paste

Glug of olive oil

2 cloves garlic, finely sliced

Juice of 1 lime

Salt and freshly ground pepper


Avocado cream  
2 avocados, peeled and de-stoned

2 tbsp reduced fat sour cream or creme fraiche

Half a red chilli, chopped

Squeeze lime juice

Salt and freshly ground pepper


To serve:

8 tortillas

Salsa

Grated reduced cheddar


Method

Mix the marinade together and pour over steaks making sure the steaks are coated. Marinate for at least 30 mins. 

Make the avocado cream by blitzing together the ingredients and chill.

Heat a griddle pan on a medium-high heat and cook the steaks to your liking. Once cooked set aside and rest. In the same pan griddle the peppers and onions, sprinkling some paprika on top. 

Warm the tortillas, slice up the steak and sprinkle with some chopped coriander and a squeeze of lime juice and serve with the griddled veg, avocado cream, grated cheese and salsa.
