tomato, chorizo + butterbean soup

We are craving some quick and easy comfort food on this stormy Doris evening. This stew like soup is packed full of bright and sunny Mediterranean goodness. We can all but dream! Served with a gooey reduced fat cheese toastie of seeded bloomer, this really is a delicious, nutritious and filling dinner. Enjoy, Mrs H x

Makes 4 large portions, smart points 5


100g chorizo, half diced, half sliced

2 red onions, finely chopped

2 cloves garlic, finely chopped

2 x 400g tins chopped tomatoes

2 chicken or veg stock cubes

1 Tbsp tomato purée

1 bay leaf

1tsp smoked paprika

1 x 400g tin butterbeans 

Handful torn basil


Heat a pan on a medium heat and add the diced chorizo. When the oil begins to ooze add the onion and garlic and sauté until soft. 

Add the butterbeans, tomatoes, tomato purée, stock cubes, paprika, bay leaf and 3 tins worth of water. Simmer for 15 mins.

Just before serving, sauté the chorizo slices until crispy and add the torn basil to the soup and season to taste.

Ladle into bowls and top with a a spoonful of reduced fat creme fraiche, the chorizo slices and a good grind of black pepper.
