pork, sweet chilli + apple burgers

This is a fab family dinner, but without the naughtiness of a full on beef burger. These always go down very well in our house served with a side of sweet potato oven baked wedges/chips and a good homemade slaw. Enjoy, Mrs H x

Serves 4, smart points 9

400g Pack of lean pork mince

4 brioche burger buns

1 onion, peeled and finely chopped

1 apple, peeled and finely chopped
2 cloves garlic, crushed
Handful of chopped coriander

Sweet chilli sauce

Salt and pepper

Heat oven to 190oC or 170oC fan.

Spray a frying pan and heat to low-medium. Add the onion, Apple and garlic and cook for a few mins. Set aside and cool.

In a mixing bowl add the pork mince, cooled onion mixture, coriander, seasoning and a good glug of sweet chilli sauce. Mix and shape into 4 big patties. Chill to firm.

Re-spray the frying pan, put on a medium heat and add the burgers. Cook for a few mins on either side until coloured. Transfer the burgers to an oven proof dish and bake for a further 10 mins.

Once cooked, remove from the oven and rest for a few minutes. Serve in brioche buns with little gem lettuce, slices of tomato, Mayo and a good glug of sweet chilli sauce.
