chicken, cider + tarragon onepot


This delicious casserole is a celebration of fabulous spring produce! Making the most of jersey royals, leeks and spring chicken, it’s super easy to make and great just served with a pile of spring greens. Perfect for a Sunday, enjoy Mrs H x

Serves 6, smartpoints 6 per portion

6 chicken breasts

Medium Butternut squash, peeled and cubed

3 leeks, sliced thickly

500g jersey royals

300ml cider

700ml chicken stock

2 tbsp chopped tarragon

2 tbsp chopped parsley

2 tbsp reduce fat creme fraiche

A little cornflour in water as thickener

Season the chicken breasts and seat on both sides in a hot frying pan. Set aside.

Heat a hob proof casserole dish with a little spray and gently fry off the leeks, butternut and jersey royals. Add the cider and reduce for a minute or too. Add the stock, chicken, and tarragon. Bring to a simmer then pop in the oven for 1.5hrs on 180oC/fan 160oC. 

Remove from oven and stir in a little cornflour to thicken, then stir in the creme fraiche and taste to season. Just before serving, sprinkle over the chopped parsley.
