lighter Kofte with carrot + cumin salad

My husband is a huge fan of lamb kofte, but I have rarely made them at home due to the high fat content which just doesn’t agree with my tum!  So I thought I’d do a bit of experimenting and make a lighter version that are just as moist and tasty and a winner all round. Enjoy Mrs H x

Makes 8 kebabs

500g lamb mince (20% fat or leaner if you can get it)

250g lean beef mince (5%)

1 red onion

2 garlic cloves

Handful parsley

Handful mint

Handful coriander

1 egg

1tsp cumin

2 tsp ground coriander

1 tsp sumac

1/2 tsp cayenne

1/2 tsp allspice

Black pepper

Sea salt

8 wooden skewers 


Carrot + cumin salad

3 carrots, grated

1/2 red onion sliced thinly

Teaspoon cumin seeds

Handful of fresh coriander, chopped

Half juice of lemon

Seasoning


Tomato & mint salad

2 large beef tomatoes, sliced

Sea salt

2 tbsp Mint, chopped


Tzakziki

Small tub of zero fat Greek yogurt

Handful of fresh mint, chopped

Handful of fresh coriander, chopped

10cm piece cucumber, chopped

Seasoning


Method
In a small processor blitz the herbs, onion and garlic till finely chopped. Add to a bowl containing the lamb and beef mince. Add all the spices, egg and seasoning and mix well. 

Split the mixture into 8, and mould into sausage like shapes. Chill. 

In the meantime soak the skewers and make the salads and tzakziki;

Toast the cumin seeds in a hot pan for a minute. Add the to the grated carrot. Mix in the lemon juice and coriander. Season. 

Mix the Greek yogurt, chopped mint and coriander and cucumber together. Season.

Slice the beef tomatoes, sprinkle with a little sea salt and mint.

Set the grill to medium. Remove the kofte from the fridge and insert a skewer. Place on foil and grill on both sides until just cooked and a little crispy on the outside. Serve with the salads, tzakziki, and pitta or flatbread.
